Three meals. Five ingredients.

Executing a well-prepared nutrition plan isn’t all about willpower. In fact, it’s a small piece of the whole health puzzle. What I’ve found works for anyone across the fitness and wellness spectrum is making healthy habits easier to follow. Notice I said easier, not easy! For most of us, time, energy and even money are in short supply. As a registered dietitian with a commute, hobbies and relationships to invest in, I’m often strategizing on how I can reduce the time it takes to shop for, invest in and prepare meals. I’ve also taken the time to streamline my diet to make it more affordable, quick, and of course, nutritionally dense!

One of my tried-and-true strategies to stay on track is having ingredients on-hand for no less than three easy dinners during the week. If I have at least three meals planned for the week, I can source leftovers for the other couple of days without relying on take-out or a random box of crackers and hummus to suffice as dinner. Weekends are easier to navigate because we don’t have our 9-5’s to deal with—but my weekdays are busy enough that I don’t have time to plan for and prepare elaborate meals every night of the week. And when I do, I need them to be quick and with few ingredients that I know will deliver big on flavor.

Fajita Steak Salad

I often surprise my clients when I tell them that you can fulfill cravings for seemingly unhealthy options with a little bit of creativity and inspiration. For example, you might think standard Mexican food does not belong in a healthy diet. Think again! Mexican food is actually full of flavor and can be eaten in a way that not only fulfills a strong hankering for this cuisine, but also aligns nicely with your health and wellness goals. In the recipe below, we take all the typical fajita ingredients, but lay them above romaine lettuce dressed in a chili-lime vinaigrette. The buttery avocado is a great replacement for the cheese. And with the amount of protein and filling healthy fats in this recipe, you won’t even miss the chips!

Shredded Pork and Cabbage

Even though I am not Irish (my red hair, green eyes and freckled face fools many), I have always had a soft spot for Irish cuisine. And this recipe, with its flavorful, shredded pork and bright crunchy cabbage, not only fulfills my continuous hankering for some Irish grub, but it is SO darn easy. All you have to do is throw the ingredients in a slow cooker and just a few hours later, you have yourself a delicious and nutritious meal. As an added plus, this recipe is taken straight from the pages of our GUT.FIX Program , so it’s compliant with both healing the gut and for those that are participating in our D.TOX program. Chicken Breakfast Patties

I just recently had a Food Sensitivity test done, and guess what is off my list of foods to enjoy? Eggs, dairy, gluten and beans. Now, in full transparency, I was a little bit overwhelmed. Even with my dietetics background, I was struggling to come up with ideas for breakfast.  I had to start getting a bit more creative. Enter: breakfast patties! Did I always used to love eating a big meat patty right away in the morning? NOPE! But I sure do now! Not only because I am feeling fantastic, and healing my gut at the same time. But I am starting my day with protein, which keeps my blood sugars rock solid and my hunger at bay.  Enjoy!

Banana Roll Ups

Crepes are one of my all-time favorite breakfast recipes. They are easy to make, have an amazing texture, and you have unlimited options when it comes to their filling.  When I was tasked to come up with GUT.FIX approved recipes - this one came right to my mind.  These banana roll ups are great for a quick breakfast or as a make-ahead snack.  Pair it with your favorite protein and you are ready to go!  Enjoy!

Almond Butter Stew

As with most American children, I grew up eating nut butter in only one way: in a sandwich, with jam (raspberry preferred). However, I have recently started experimenting with using nut butter in a more alternative and savory way. Now, my eyes have been opened up to a whole new way of using my beloved nut butters to bring some warmth and comfort to foods in really unexpected ways. I know that the thought of almond butter and tomatoes sounds like a regrettable combination, but you’ll really have to trust me on this one. In fact, it’s one of my most favorite meals of all time. You can serve this dish with some brown basmati rice if you are needing a bit more carbs for workout recovery, or serve alongside some roasted broccoli like I did here. Filling and soul-satisfying — I can’t wait for you to try this!
