Stuffed Peppers 

I had to share this recipe because I’ve been talking about it all week. It’s one of my all-time favorite meals to prepare when detoxing. This dish is easy to make, nutritious and satisfying. Peppers are rich in fiber and vitamin C which are both incredibly important for cellular repair and flushing out toxins during detox. I choose grass-fed beef, and make sure it's hormone-free.

If you’re a vegan or vegetarian, add substitute the meat for quinoa, which is also tasty and lends a nutty flavor.

Beef Stuffed Peppers

Prep time: 15 minutes

Cook time: 60 – 90 minutes

Serves: 4

Ingredients

  • 4 medium organic green, red or yellow bell peppers (or combination of colors
  • 1 lb. grass-fed ground beef or bison
  • ¾ cup chopped onion
  • ¼ cup black beans
  • ¼ cup tomato paste
  • 1 tsp. dried oregano
  • ¼ cup of sliced olives
  • ¼ tsp. black pepper

Method

  1. Heat oven to 350° F.
  2. Cut off tops of bell peppers; remove seeds. Set aside.
  3. Combine ground beef, onion, beans, tomato paste, olives, ½ tsp. oregano and black pepper in large bowl, mixing lightly but thoroughly.
  4. Spoon into bell peppers; stand peppers in 8x8-inch baking dish. Cover dish tightly with aluminum foil.
  5. Bake in preheated oven 1 to 1.5 hours until cooked to medium (160°F) or until beef is not pink in center and juices show no pink color.
