Shredded Pork and Cabbage

Even though I am not Irish (my red hair, green eyes and freckled face fools many), I have always had a soft spot for Irish cuisine. And this recipe, with its flavorful, shredded pork and bright crunchy cabbage, not only fulfills my continuous hankering for some Irish grub, but it is SO darn easy. All you have to do is throw the ingredients in a slow cooker and just a few hours later, you have yourself a delicious and nutritious meal. As an added plus, this recipe is taken straight from the pages of our GUT.FIX Program , so it’s compliant with both healing the gut and for those that are participating in our D.TOX program. Try it and you will love it.

Yields 4-6 servings

Ingredients:

 

 

Instructions:

 

  1. Line bottom of slow cooker with 4 slices of bacon.
  2. Rub pork roast all over with salt and place in slow cooker.
  3. Pour liquid smoke over roast and top with 4 more bacon slices.
  4. Cook 4-6 hours in slow cooker on high.
  5. When done, remove roast from slow cooker and let rest before shredding.
  6. Remove the liquid from the slow cooker and put in a saucepan. Add cabbage to saucepan and bring to a boil. (Add a cup of water if needed). Simmer 5-10 minutes, until cabbage wilts.
  7. Serve shredded pork over cabbage and enjoy.

Per Serving (4 ounces pork, 2 slices bacon, 1 cup shredded cabbage):  Calories: 350 | Carbohydrates: 8 grams | Fat: 24 grams | Protein: 26 grams
