UCAN Eat a Cookie

As an avid exerciser, I am always trying to tweak my fueling strategies.  I’ve tried all sorts of gels and performance supplements, but I’ve found that using whole food recipes for support helps sustain my fuel needs the best.

I love creating these recipes because they can also serve as a healthy snack or dessert – perfect for my clients looking for something tasty that won’t impact their waistline.

I’m a big fan of Generation UCAN and often use it in recipes to keep my blood sugars stable along with helping nourish my body.  I’ve used different flavors of it in recipes before (see here and here) but the cinnamon flavor is one of my all-time favorites and does an amazing job flavoring faux-carb recipes, including these wonderful cookies.

They serve a perfect flavor profile for the upcoming Fall season upon us and are delicious!

Try these cookies. You will love them.

Yields 12 cookies







  • Preheat oven to 320 degrees Fahrenheit. Add all ingredients to a food processor and pulse until well combined.
  • Roll into 12 balls and flatten with a fork.
  • Bake for 12 minutes and then let cool.



Per Serving (1 cookie):  Calories:210 | Carbohydrates: 9 grams | Fat: 8 grams | Protein: 4 grams
