Beef Enchilada Cabbage Rolls

If you have a favorite recipe that fits well with our nutrition philosophy, you can send in your recipe and photos to weightloss@lifetimefitness.com

Thank you to Healthy Living How To for providing today's delicious recipe. If you like Mexican food, here's a great alternative to using flour tortillas, and there's nothing like making the sauce from scratch. As are the other recipes on the site, this one is lower in carbohydrates, gluten-free and tastes amazing. You can also have it done in less than 30 minutes! Enjoy!

*If you are able to tolerate dairy, you can smother the top with shredded cheese before baking as well as a little sour cream on the side. (sniff, sniff, I unfortunately cannot)
